Oversees management staff. Coordinates the planning, organization, and training necessary to achieve restaurant objectives in sales, costs, employee retention, communication and awareness, guest service and satisfaction, food quality, and sanitation.GENERAL EXPECTATIONS:

  • Act with integrity, honesty and knowledge that promote the culture, values and mission of MG-International Smoke, LLC and Partners.
  • Ensure that all guests feel welcome and are given responsive, professional, gracious service at all times.
  • Perform all aspects of position with efficiency, respect, friendliness, professionalism, teamwork, knowledge, patience, awareness, compassion, courtesy and initiative.
  • Understand philosophy of management and owner. Display consistent attention to detail and follow through of all restaurant and MG-International Smoke, LLC policies and Partners.
  • Represent the restaurant professionally through effective communication, cooperation and relationships with all business partners.
  • Collaborate with team to create a culture and restaurant work environment based upon respect; foster opportunities for team to learn, grow and develop their abilities.
  • Lead the Management Staff, ensuring that service standards are on par with all outside accreditation sources.
  • Understand completely all programs, procedures, standards, specifications, guidelines and training programs.
  • Offer positive solutions to problems or issues and be a voice that is part of the decision-making team.ESSENTIAL JOB FUNCTIONS(Includes but is not limited to the following duties. Other duties may be assigned.)P&L/GL
  • Review P&L and ensure accuracy.
  • Review GL and ensure accuracy.
  • Identify improvement areas and devise remedies for improvement.
  • Complete P&L review the same day P&L is final.
  • Distribute P&L Review to specified distribution list.
  • Follow through with solutions on variable cost issues.
  • Responsible for Monthly P&L Review.Budget
  • Complete annual budget and present to Finance and Ops.
  • Approve and agree after finance has reviewed.Cost Control
  • Take all appropriate measures to ensure that all variable costs are in line with budget.Daily Flash
  • Supervise the accurate completion of the Daily Flash.
  • Send to specified distribution list.
  • Respond to immediate cost control issues.Daily Meetings
  • Prepare for Daily Meetings.
  • Participate in Daily Meetings.
  • Conduct Daily Meetings at specified time.
  • Hold all staff accountable for executing their tasks.Marketing
  • Complete/Update Sales and Marketing Plan Monthly.
  • Follow through on all self-assigned tasks.
  • Distribute to specified Distribution List.
  • Work with Mina Group to generate new ideas.
  • Work with Chef and Sommelier to promote special dinners.
  • Establish and maintain Concierge program.
  • Establish and maintain Community outreach.
  • Establish and maintain Grassroots plans.PR
  • Designated point person for all PR related events and requests.
  • Approve all PR requests with MM.
  • Attend and represent MG on all PR events related to International Smoke.
  • Coordinate all PR events/requests in International Smoke.Partner Communications
  • Designated point person for all communication between International Smoke and business partners with regards to issues or concerns.
  • Ensure information requested is received in a timely fashion.
  • Attend all requested meetings.Comps
  • Responsible for all comps.
  • Approve all comps.
  • Enforce written and approved Comp procedure for The Mina Group restaurant.
  • Control all comps and ensure budget compliance.HR
  • Supervise, manage and mentor AGM on all HR matters.
  • Participate in all Disciplinary Actions.Weekly Manager Meeting
  • Ensure WMM takes place every week at specified time.
  • Include all specified personnel (including Mina Group) in WMM.
  • Ensure information is accurate and up to date.
  • Conduct WMM and hold management team accountable for delivering results on assigned tasks.
  • Follow up with status of all tasks at next meeting until completion.
  • Ensure notes get distributed to specified distribution list.Inventory Control
  • Ensure all inventories are turned in at specified time.
  • Ensure accuracy of monthly and weekly inventories.
  • Ensure security of all inventory.
  • Ensure consistency of inventory procedure and communication to new managers regarding SOPs.
  • Ensure inventory levels are at budget compliance.Purchasing
  • Approve all purchases.
  • Insure receipt, cost accuracy.Service
  • Direct service at International Smoke.
  • Ensure level of service is executed to high standards nightly.
  • Complete employee reviews.Management
  • Direct all FOH Management in International Smoke.
  • Responsible for Supervision/Execution of all FOH Management Job Duties.Mina Group Communication
  • Open and clear communication with Corporate.
  • Complaint letters.
  • Conduct thorough investigation of guest complaint and find resolution.
  • Follow up with guest immediately after the complaint is received (within 24 hours).
  • Track complaints for future reference.SUPERVISORY RESPONSIBILITIES:
  • Directly oversee all restaurant management. Carry out supervisory responsibilities in accordance with the organization's policies and applicable laws.REQUIRED QUALIFICATIONSTo perform this job successfully, an individual must be able to perform each essential duty satisfactorily. The requirements listed below are representative of the knowledge, skill, and/or ability required.   • 8-10 years of service experience, preferably in a fine dining environment.
  • Excellent communication and organization skills. Ability to interact professionally and diplomatically with a variety of business partners, guests, colleagues, and direct reports.
  • Fluency in Microsoft Office Suite: Word, Excel, PowerPoint.
